2 teaspoons active dry yeast
4 cups all-purpose flour
1 teaspoon salt
1 cup shredded mozzarella cheese
1/4 cup baking soda
1 egg (beaten for egg wash)

Instructions

1 In a large bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until frothy.
2 Add flour and salt, mixing until a dough forms. Knead for 5-10 minutes until smooth.
3 Cover dough and let it rise in a warm place for 30 minutes until doubled in size.
4 Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
5 Divide the dough into 12 pieces and flatten each piece. Place a spoonful of mozzarella cheese in the center and seal the dough around it.
6 In a large pot, bring 10 cups of water to a boil and add baking soda. Boil each pretzel bomb for 30 seconds.
7 Place on the baking sheet, brush with egg wash, and sprinkle with coarse sea salt.
8 Bake for 15-20 minutes until golden brown. Allow to cool slightly before serving.
