Instructions

1 | Heat the milk in a large pot over medium heat until it reaches 190°F (88°C). |
2 | Remove the pot from heat and stir in the vinegar. Let it sit for 5 minutes. |
3 | Add rennet to the mixture and stir gently for another 30 seconds, then let it sit undisturbed for 5-10 minutes until curds form. |
4 | Cut the curds into 1-inch pieces, and gently stir for 5 minutes. |
5 | Heat the curds gently while stirring until they reach 105°F (40°C). |
6 | Drain off excess whey and place the curds in a bowl. Add salt and knead the curds until smooth and stretchy, about 5 minutes. |
