1 gallon of whole milk
1/4 cup of white vinegar
1/2 teaspoon of rennet
Salt to taste
Ice water
Cornstarch (optional, for dusting)

Instructions

1 Heat the milk in a large pot over medium heat until it reaches 190°F (88°C).
2 Remove the pot from heat and stir in the vinegar. Let it sit for 5 minutes.
3 Add rennet to the mixture and stir gently for another 30 seconds, then let it sit undisturbed for 5-10 minutes until curds form.
4 Cut the curds into 1-inch pieces, and gently stir for 5 minutes.
5 Heat the curds gently while stirring until they reach 105°F (40°C).
6 Drain off excess whey and place the curds in a bowl. Add salt and knead the curds until smooth and stretchy, about 5 minutes.
